Your challenge is to have Occitania be an independent country, either by remaining unconquered by France, or by having it break away at some point.

Well bye bye frances status of a great power. But one way i could see it is a better performance in the hundred years war if the english can capture the south which I believe they did at one point 1360 I believe. then maybe they hold onto this land maybe further secure the south then at the wars end the french crown splits into two a crown of Occitania and a crown of france which would give the english a new crown and a bunch of french land in return enlgand drops their claim. and then eventually you have the Occitania crown seperate from the English king then you have a sweet independent Occitania. And if you really want to screw the french then declare brittany an independent state oh i would feel very bad for france
You would also have a situation where hapsburg dominates europe much more completely without a large power like france to defy them
