AHC: Coptic-speaking but Muslim Egypt

With a POD after 661 CE, come up with a scenario where Egypt is majority Muslim but largely speaks the Coptic language (akin to how Persia is Muslim but retained it's language and culture). Bonus points if the Egyptians use the Coptic alphabet (instead of a modified form of Arabic script) to write down Coptic ITTL.
 
An early collapse of the Caliphate into local Muslim states. Gradually, Coptic culture makes a resurgence as it did in Persia, but the Muslim faith remains in control. Considering how strong Coptic Christianity was, though, this may not be doable; it seems more likely Islam is thrown off altogether at such an early point.

Maybe the collapse occurs and then Egypt is reconquered by an Arab or Tunisian Muslim State? It stays pretty autonomous, allowing culture to flourish, but Islam is enforced.
