The Ancient Egyptian Empire at its peak territorial extent included Egypt, Nubia and the Levant.

How could we get it extended further, to encompass any of these other choice spots, in order of importance:

1) Mesopotamia
2) Asia Minor
3) Greece or Aegean islands
4) Arabia
5) Libya and Tunisia (Carthage)
6) Persia
7) Puntland/Somalian horn

Well, if you include the kingdom of the Ptolemys, and I don't see why not, they controlled a fair amount of Asia Minor, basically Roman Cilicia, Lycia, Caria they controlled Cyprus, and they controlled some Aegean Islands.

Didn't Herodotous say that one of the Egyptian pharaohs invaded the Eastern European Mediterranean and even Italy?

Get rid of the Hittite Empire and I could see the Egyptians attempting expeditions into southern Anatolia or Mesopotamia.

More generally, butterfly one of their Intermediate Periods and let them have a nice, stable dynasty for a few more centuries at any time—that was when the ancient Egyptians performed best.

Nix the whole "if you die outside of Egypt you dont go to the afterlife" thing, for starters

o_O did not know that was a thing, wow! Makes sense, though, given the central place of the Nile in Egyptian mythology. What if outside invaders like the Hyksos had consolidated their rule? Could they have done away with the death outside of Egypt deal?

Concerning Libya, I believe the native dynasties did conduct expeditions into the Libya but no long term control though

Yes. Depending on the era Egyptian control variously included Libya, Somalia, and the Levant all the way up to Syria. More recent evidence also shows that they had a fairly extensive naval presence on the Red Sea as well. However, none of those places were considered part of Egypt proper and the control was always "temporary". Temporary in this case was sometimes a very long time indeed. Libya was conquered and abandoned multiple times over the centuries.

Especially in the Old and Middle Kingdoms Somalia/Puntland was often treated like a farm. Raid invasions were conducted every so often where slaves and livestock were captured. Then they'd give them time to recover and raid again.

Maybe get it to be "we have to expand Egypt as much as possible, otherwise all those people will never get to the afterlife".

Tuthmosis III could have pressed onward into Asia Minor and Mesopotamia without much more difficulty. He was a military genius and Egypt was prosperous and stable at the time, while other powers were less so.

I kind of like it, an earlier 'we are only invading you to save you, honest' concept, perhaps pushed alongside a further degree of consolidation of the pantheon. Horus could take on much of Anhur's position, for instance.

Me too.

And - I have nothing to really add at the moment. But thanks for the responses. This one is a first for me, never done an Ancient Egypt thread before I think.
