But nixtamalization would increase the over all health of the many poor who relied on corn. Sometimes people overstate the importance of nixtamalization because really it's mostly just the increased uptake of niacin and niacin is found in sesame a very common oilseed utilized in West and East Africa.
In places like Southern Africa at the time of Apartheid it would have been beneficial though.
I also can see it's adoption throughout grain growing Africa to alleviate dehusking and winnowing with an added lye water process to remove chaff. It doesn't have to be corn.
Actually now that I think about it, have it get spread with grumetes and krumen and you'll have it disseminate to damn near every African port.
