Been reading about inns which had a pan of ale simmering on the fire, and people told me it would all be non-alcoholic but I can't see that

Plus, if people are coming in and drinking it, then it is continually being topped up from the barrel so it's continually having new alcohol added to it, to then slowly cook off.
Any thoughts or knowledge?
