Sino-Japanese war in 1874

For the Chinese regions like Korea/Tonkin are more important than Formosa, so it's unrealistic they'd go to war over them. Probably the proposed invasion of Korea instead of the Ganghwa Treaty would prompt a response.
 
Given its dispute between two Asian power not allied with any western powers why would they care ?
because the Europeans dont want anyone to destabilize their hold on Chinese trade, and Japan holding Taiwan does that. There were European powers interested in targeting Formosa too before the Japanese came

They didn't stop Japan from taking Taiwan in 1895

yeah because 1875 isnt 1895. By 1895 Japan was on good terms with the British, who were okay with a pro-British power taking control of key assets in East Asia. Hence why they okay-signaled the annexation of Korea before it happened
