What's the incentive for the Turks to get involved here?

Grab a bit of the Middle East, Caucasus and Cyprus?

The Germans could have offered them these in return for their participation.

With the Ottoman Empire being history only almost 25 years ago, why shouldn't they try?

Also It should be pointed out the IJA has also got a major ground war underway in China that'll have an impact too.

Joining the winning side and gaining is better than not doing so and later being invaded by the winning side.
