How could we marry Catherine of Valois to Owen Tudor without Catherine of Valois marrying Henry V, is it possible for Kate of Valois to marry Owen Tudor earlier than OTL?
 
No, it is not at all possible. Owen Tudor was in Henry V's household, and remained there after Henry V's death. It was then that he met and married Catherine of Valois. If she had not married Henry V, there is no way that the daughter of a French king could ever, ever marry an obscure Welsh squire.

It qualifies as "if it didn't happen we'd call it unrealistic" more than most events labeled that here even with that.

Yeah, actually, Owen Tudor was not the first choice for Catherine of Valois but rather her first choice was Edmund Beaufort, 2nd duke of Somerset which did not happen because the parliament opposed her.
