A different Christmas

As I understand it the (presumbalby Catholic) Church decided on December 25the as a date for Christmas because it fitted in with previous faith's festivals

Could it have either been fixed at a different date or simply not been a big deal?

Would we still have had a mid winter event (possibly around New Year)?

Well it's likely that it's going to try and supersede a former Pagan holiday, just because their existence threatens Christian ideals.

and Christmas largely became a HUGE deal in the last 50-60 years, at least in America, because of the profit possibilities.

Not really, Christmas has been pretty big for a very long time. Back in the 17th Century it was already a tradition to celebrate on the 25th of December (and the 12 days afterward, which we don't have today). It was even around in the 16th century as many Puritanical Christians would describe a Catholic festival as being 'Christmassy', obviously used as an insult there.

Especially if it is brought up that the 25th is the god Mithras's birthday
