...I was just a bit ticked off about the TL. The Austrians are a nice, neutral choice for me, considering I have no emotional ties to the Austro-Hungarian Empire whatsoever. It'd be a different story entirely if someone like Aussey chose the Austrians, then you'd have a problem, he's an Austrofile... Besides, it gives me the leeway to get some African lands for the Austrian Empire, and secure the economic and political prosperity of the lands of the Hapsburgs for decades to come!

Well if we are starting in 1860, I will take Piedmont Sardinia with what they had then if Risban wants the Papal States again or Mexico. As in 1860 all Piedmont didnt have was lombardy-venetia and the area directly around rome. As says this source:

I would assuem due to a weaker france that Sicily would have been added earlier.

You can either play Brazil for a year and then switch to the CSA (when the war starts) or just play Brazil. Or you could do random temping either way :P

None of the major powers, to my knowledge, are still open. But, you've got the German Confederation, Sweden, Denmark, Norway, I don't think that the Benalux countries, The Netherlands or Belgium, have been claimed either. Basically everything except the USA and Canada are open in the Americas. I think Japan might be open as well, along with Siam, Persia, Afghanistan, Nepal, Tibet, and the patchwork states of Saudi Arabia. Not much IMO.
